Types ;

Dried apricot is derived from fresh apricot, there are two types:

 

Natural dried apricots are dried directly under the sunlight and have a light to dark brown color. They are not treated with sulphur dioxide.

Sulphured dried apricots are treated with sulphur dioxide (SO2) in order to provide a lighter colouring and a longer shelf life. The colouration is between light yellow and orange.

Dried apricots are often consumed as a snack, and after grading are also mixed with other dried fruit and nuts, as well as being an important ingredient in chocolate snacks, baked cakes and desserts and breakfast cereals. They are usually supplied whole, but can be supplied in halves or slabs.

Sultana Raisins

The grape, which dates back to 5000 BC, has the most variety of fruit types. 50-60 varieties of grapes that trade in Turkey’s Anatolian homeland is done. Turkey’s exports in world trade and the subject of the greatest importance with sultana raisins, seedless and especially “Sultana” are the types of raisins.

Sultanas are produced from varieties of seedless grapes, dried to concentrate their rich flavour. The sultana was traditionally imported to the English-speaking world from the Ottoman Empire.

Normally it takes up to 3 weeks for the grapes to dry. To minimise the time and retain the light colour farmers use a Potassium carbonate and olive oil solution which cracks the invisible membrane on the grape and speeds the drying time.We call the Grapes dried in this manner as  Sultanas.

The sultana differs from the raisin in two ways, one of which is fairly apparent. It is lighter in colour – the lighter the better, in quality terms – but it is also the sun-dried grape of one variety alone, the green, seedless Sultana grape of ancient (possibly Persian) lineage.

The sultana raisins are classified into five types under the type numbers of 7, 8, 9, 10, 11 .type  7 has the darkest and 11 has the lightest color. We divide the raisins into five sizes jumbo, standard, medium, small and small small according to their largeness being.

Aegean Region of Turkey is the biggest producer of figs and dried figs in the wolrd. %75 of dried fig production is being made by Turkish farmers.

In Turkey , Figs are grown under natural conditions ,harvested and, sun dried on racks under controlled conditions. Dried figs are graded ,washed and packed under hygienic conditions.

There are many fig and dried fig varieties known and favored in various areas. Local types of dried figs are given names mostly according to their colors as black, White, mauve, aubergine; according to their shapes, as glass, “söbü”; according to area of production as “Bursa” black, “Mut” fig; according to their taste, as sugar; according to season of harvest, as june, winter reaping hook and they are mainly sold direclty to consumers in the nearby markets. The Aegean population is used fresh figs sold in baskets by Street vendors shouting “Bardacık” small glass and, in fact, the term “bardacık” or “bardakçı” (seller of glass) has been used synonymously for fresh figs in the region.
